In relation to most other date varieties, the “Deglet Nour” needs only a short drying period in order to be preserved. The cluster provides a store of moisture that is released slowly to the dates. This means that dates left on the stem are good for up to a year, providing they are correctly stored.
The dates should be kept from the light and stored at between 5-10 °C. Cool cellars provide the perfect environment for this. To moisten and revitalise the fruit, place the dates in a sieve and hold over steam. The dates will absorb the steam and natural sugars will be released throughout the flesh.
